ONE PAN ROASTED VEGETABLES


Quick and healthy oven roasted veggies done in one pan in under 1 hour.

 When it comes choosing your vegetables, I say smoke'em if you've got'em. Dig around in your fridge and toss in what's there.
This is a long time favourite recipe of mine. This is great when you are hungry but lazy and are on the edge of calling take out.


INGREDIENTS

1 carrot
1 tomato
1 onion
2 bell peppers
3 eggplants
3 zucchinis
2 tsp olive oil
pepper, salt, oregano, thyme 

Chop the veggies and season with olive oil, pepper, salt, oregano and thyme.
Combine all of your vegetables into a roasting pan. Bake for 45 minutes to 1 hour (180 degrees C)

CHICKEN CURRY WITH PEPPER AND ONION

Today's lunch was sooo good! I love foods healthy and low in calories but also tasty too. So this one amaze me!

1) Chop some peppers and some onions. As many as you like. Put them in a pan with your chicken.

2) Add curry, oregano, salt, black pepper and just a pinch of sweet paprika. I squizzed a lemon and add some mustard. Also every now and then I add some water. After 15 -20 minutes the food is ready. You can enjoy this chicken with some boiled rice ( do you know how to boil the perfect rice? the perfect boiled rice ) or with salad. Easy right?

HOW TO COOK RICE PERFECTLY

It is seemingly the most basic kitchen task!

My mam taught me this recipe. Let's find out her secrets for the perfect rice!

1) Add 3 cups of water for 1 cup of rice! This is the most important step for the perfect rice!

2) Let the water boil first and then add the rice.

3) Once the water is ready add some salt and then the rice.

4) The rice is ready when there is no water left in the pot.

5) Put on the pot one dishcloth and the the lid and let it rest for 5 minutes.  

The perfect rice is ready!

Rice with vegetables. Healthy food.Food low in calories.

To have a healthy lifestyle you need to eat healthy. One of my goals for 2017 is to eat healthy and go 5 days per week to the gym. So I'm Going to upload healthy recipes ( one every week). 

This recipe is really easy and quick. 

1) Put any vegetable of your choice. I use mushrooms, green onions, green beans and some sweetcorn.Put all your vegetables in a pan with less than a table spoon of olive oil
and let them cook for about 15 minutes. Also add some salt and pepper. Just because I'm from Greece I add some oregano (because there is no food without oregano ;))

2) while the vegetables are cooking Put 3 glass of water in a pan with some salt and let the water boil.
And when the water is boiled add one glass of rice and let it cooked.
4)The vegetables must be ready and they look like this.
5) When the rice is ready add the vegetables with the rice in the pot and let the food rest for five minutes until there is no water left.
6) BON APETIT!!! Enjoy...

My name is Joy.I live in Greece. I am 25 years old. I've studied Marketing and Communication in the Economic University of Athens. As you know in Greece we are in the middle of an economic crisis so finding a job is really hard.I work in the advertising department in an International company. My job is really amazing but exhausting too.  I'm starting this blog because I have so many amazing  ideas and such a passion for DIYs, cooking,organization hacks and hacks in general and I would love to share them with you.
